Pork shoulder is one of the most versatile, delicious cuts on the entire pig. The butt portion comes from the upper shoulder and contains several amazingly flavorful and marbled muscles. This portion can be prepared in a variety of ways. Bone in, boneless, skin on, skin off. Regardless of these details, this cut becomes fall apart tender with slow and low cooking. Roasting, braising, and smoking are all popular cooking methods.
These bone in roasts have the skin removed and comprise the whole pork butt shoulder. Perfect for roasting, smoking, or braising as it becomes juicy, succulent pulled pork. It also makes great sliced pork if you prefer to cook it for less time than it requires for pulled pork.
